180g pack Santa tomatoes
2 spring onions
2 slices brisket pastrami or cooked ham
30ml (2 tablesp) plum sauce or a sweet chutney
3 soft flour tortillas
A child's recipe, ideal for Father's Day!
Take the stalks off the tomatoes, cut each one is half and put them into a large bowl. (There are enough tomatoes for you to eat a few whilst making this lunch for Dad).
Peel the cucumber, then shred the cucumber on a coarse grater - but don't shred the watery seeds in the middle. Wrap the shredded cucumber in kitchen towel and squeeze out the juice.
Trim the ends off the spring onions and cut lengthways into thin strips.
Cut the meat into thin strips.
Put all these ingredients into the bowl with the tomatoes. Stir in the plum sauce or chutney.
Heat the tortillas in a microwave or warm oven.
Divide the tomato mixture between the tortillas, and spread it almost to the edges. Roll up each tortilla. Cut each one in half and hand them over to Dad. He'll enjoy them.
