Kid's Mini Pizzas

 

Ingredients

Pizza sauce
2tbsp olive oil
1 onion, chopped finely
2tsp dried Italian mixed herbs
500g British vine tomatoes, roughly chopped
200ml vegetable stock
Few drops of balsamic vinegar
Pinch of caster sugar
Salt and freshly ground black pepper

Pizzas
4-6 mini pizza bases or mini naan breads
2tsp dried Italian mixed herbs
100-150g Cheddar cheese, grated
Sliced British vine tomatoes, baby plum or cherry tomatoes

Method

Make the pizza sauce topping with British vine tomatoes for freshness and flavour.

Serves 4-6
Prep time: 35min
Cook time: 10min

1. First, make the pizza sauce. Heat the olive oil in a saucepan and gently fry the onion for 8-10 minutes, until very soft. Add the herbs and tomatoes and fry for another few minutes, then add the vegetable stock. Heat and simmer for 18-20 minutes.

2. Puree in a blender, or use a hand-held stick blender. Adjust the seasoning, adding balsamic vinegar, caster sugar, salt and black pepper, to taste. Set aside to cool.

3. Preheat the oven to 190°C, fan oven 170°C. Gas Mark 5. Put 4-6 mini pizza bases onto a baking sheet. Spread the tomato sauce on top and sprinkle with herbs. Add sliced tomatoes, baby plum or cherry tomatoes, if wished, then scatter the grated cheese on top. Bake for 10-15 minutes. Serve whilst warm.

Cook’s tip: Make plenty of sauce so that you have some to hand next time you rustle up these pizzas. The sauce will keep in a screw-topped jar in the fridge for up to 5 days, or it will freeze for up to 3 months.
