Classic Tomato and Mozzarella Salad



Serves 4
675g (1½lb) British classic tomatoes
350g (12oz) Mozzarella cheese
2 x 15mlsp (2tbsp) Basil leaves
4 x 15mlsp (4tbsp) Extra virgin olive oil
25g (1oz) Pine kernels, toasted


Slice the tomatoes and mozzarella cheese. Arrange on serving plates and season.

Tear the basil leaves and scatter over the salad. Drizzle over the olive oil and sprinkle with the toasted pine kernels, just before serving.

Serve with crusty bread.

Tip This simple but delicious recipe would make a great al fresco dish. Ring the changes by using classic, beef or large vine tomatoes.
