Beef Tomato Salad with Mustard & Mint Dressing



3 British beef tomatoes
3 spring onions

For the dressing:
1 teaspoon Dijon Mustard
2 teaspoons tarragon or white wine vinegar
2 tablespoons olive oil
pinch brown sugar
1 teaspoon finely chopped mint
salt and freshly ground black pepper


Serves 4 as a side dish

  1. Turn the tomatoes on their side and cut down into 0.5cm slices. Arrange in overlapping circles on a plate.

  2. Trim and clean the spring onions. Cut in half lengthways and slice on the diagonal. Scatter over the tomatoes.

  3. Whisk all the dressing ingredients together and drizzle over the salad.
